A day in which I make something delicious is a good day

I made a Caribbean stir fry with my mom tonight. First we stir-fried squash, plantains, cabbage, onions, ginger, carrots, sweet pepper, and green beans - then we mixed in cashews and noodles - then over everything, coconut milk. Delicious.

I love stir frying.

Looks yummy!

I'm really picky about my stir-fry. In order to like it, I have to like all the vegetables. Since that rarely happens, I rarely like stir-fry. Darn pickiness.

Mmmm...that looks SO good.

What kind of noodles did you use? :)

Priya and Hate This And I'll Love You - Thanks, it was/is! :) I'm going to have some leftovers for lunch...yum.

Q - You should make your own with all your favorite veggies, hm?

PinkAppleCore - I just used Ramen, which was one of the kinds the recipe suggested, but I might spring for nicer noodles next time. :P

Yes. With carrots and snap peas and maybe green beans and edamame and cauliflower and no peppers, onions, or mushrooms. Mmmmmm...

Delicious. I thought the squash was bananas at first :D

cuileann 3/24/2009 9:57 PM

Faith - The things that look like bananas are the plantains, actually!

I think you have a terrific mother!

(and look! no saltines anywhere in the picture. you must be feeling better.)

I made medieval soup today. Just carrots, celery, onions, white beans, lemon juice and chicken broth. But very nourishing and yummy. I love plantains - especially plantain chips (salty).

Cuileann 3/25/2009 4:02 PM

Beth - I am feeling 100% better, and it is great! And my mom is pretty terrific, yes.

Lenore - Ooh, that does sound rather medieval - and delis-ious.
